No Bake Peach Pie

Ingredients
  

  • 4 cups Peeled, Pitted & Sliced Peaches
  • 1/2 cup Granulated Sugar
  • 3 tbsp Cornstarch
  • 1/2 cup Cold Water
  • 2 tbsp Lemon OR Orange Juice
  • 1 baked 9-inch Graham Pie Shell Crust
  • 1 cup Whipping Cream
  • 2 tbsp Maple Syrup

Instructions
 

  • ⦁ In a bowl, crush 1 cup of peaches with potato masher; set aside. 
  • ⦁ In a saucepan, combine sugar and cornstarch; gradually stir in water and crushed peaches. Cook, stirring over medium heat untiol just beginning to boil. Reduce heat to low; simmer, stirring for 3-5 minutes or until thickened.
  • ⦁ Remove form heat; stir in lemon juice. Chill until just warm.
  • ⦁ Stir in remaining peaches. Spoon into pie shell. Chill for 2-3 hours or until set. 
  • ⦁ Whip cream with maple syrup; spoon over fruit and serve.
