No Bake Peach Pie
Have a peach and help meet your fruit and vegetable requirements for the day!
Ingredients
- 4 cups Peeled, Pitted & Sliced Peaches
- 1/2 cup Granulated Sugar
- 3 tbsp Cornstarch
- 1/2 cup Cold Water
- 2 tbsp Lemon OR Orange Juice
- 1 baked 9-inch Graham Pie Shell Crust
- 1 cup Whipping Cream
- 2 tbsp Maple Syrup
Instructions
- ⦁ In a bowl, crush 1 cup of peaches with potato masher; set aside.
- ⦁ In a saucepan, combine sugar and cornstarch; gradually stir in water and crushed peaches. Cook, stirring over medium heat untiol just beginning to boil. Reduce heat to low; simmer, stirring for 3-5 minutes or until thickened.
- ⦁ Remove form heat; stir in lemon juice. Chill until just warm.
- ⦁ Stir in remaining peaches. Spoon into pie shell. Chill for 2-3 hours or until set.
- ⦁ Whip cream with maple syrup; spoon over fruit and serve.
