Stuffed Peppers
Bell peppers are an excellent source of Vitamin C
Ingredients
- 4 Bell Peppers, Tops & Seeds Removed
- 1 lb Lean Ground Turkey
- 2 tbsp Olive Oil
- 1/2 Onion, Chopped
- 1 Zucchini, Chopped
- 1/2 Red Bell Pepper, Chopped
- 1/2 Yellow Bell Pepper, Chopped
- 1 cup Spinach
- 1 can Diced Tomatoes
- 1 tbsp Tomato Paste
Instructions
- ⦁ Preheat oven to 350°F (175°C)
- ⦁ Wrap the 4 seedless bell peppers in aluminum foil, and place in a baking dish. Bake 15 minutes in preheated oven. Remove from heat.
- ⦁ In a pan over medium heat, cook turkey until browned. Set aside. Heat oil in pan, and cook onion, zucchini, red and yellow bell pepper, and spinach until tender. Return turkey to pan. Mix in the tomaotoes and tomato paste, and season with italian, garlic, salt and pepper. Stuff peppers with pan mixture. Return peppers to oven for 15 minutes. Lightly season with garlic powder, Italian seasoning, salt, pepper.
